1 (15 1/2 ounce) can creamed corn
1 cup vegan creamer or rich nondairy milk
Ener-G egg replacer for 2 eggs or 2 tablespoons soy flour
2 tablespoons oil
1 tablespoon sugar
1/2 teaspoon salt
8 Ritz type crackers
1 teaspoon chopped onion
1 teaspoon chopped green pepper
1. Preheat oven to 350 degrees F. Combine all ingredients, mix well.
2. Place in 1 quart casserole dish. Place casserole dish in pan of water, and place in oven.
3. Bake one hour, or until golden.
