3 tablespoons dark sesame oil
1 onion, sliced
1 medium sized eggplant, sliced 2x1/2"
3/4 cup unfiltered apple juice
1/2 cup cashew nuts
1/4 cup tamari or soy sauce
1. Saute onion in oil until golden. Add eggplant to onions. Saute for about 10 minutes.
2. Add applejuice and cashews. Simmer until apple juice is reduced to about half the amount, about 10 minutes.
3. Remove from stove and add tamari. Serve over rice.
