2 medium potatoes, chopped 1"
1 bell pepper, chopped
1/2 medium yellow onion, diced
oil, as needed
2 tablespoons soy sauce
2 tablespoons hot sauce (I use Franks Hot Sauce)
1 heaping tablespoon tahini
1/2 tablespoon dill
1/2 tablespoon thyme
salt and pepper, to taste
1. Boil potatoes for under 10 minutes to speed up the process, and then set aside. Fry pepper and onion in a wok or pan oil until tender. Add potatoes.
2. Sprinkle soy sauce and hot sauce over vegetables. Add tahini and make sure that it evenly coats the veggies.
3. Finally, add the spices. Stir and serve.
This is an old favorite of mine! Enjoy.
