2 medium large sweet potatoes
3 tablespoons margarine
1 1/2 tablespoons brown sugar
few dashes cinnamon
dash nutmeg
1/2 cup orange juice or 1/2 cup crushed pineapple
salt, to taste
1. Boil or bake the sweet potatoes until soft. Remove the skins.
2. Mash all the remaining ingredients into the potatoes. Serve and enjoy!
If you're wanted a slightly more sweet or festive dish, put the mashed yams in a casserole dish, cover with a layer of vegan marshmallows and bake at 350 degrees F until the marshmallows on top turn a light gold color.
This recipe is a wonderful side to any meal. However, when I cook it I usually have a salad or greens, some fried tofu, and some fresh vegan bread with it, and its a lovely meal!
