1 zucchini, thinly sliced
1 yellow squash, thinly sliced
1 onion, thinly sliced
2 bell peppers (red and green), thinly sliced
2 carrots, thinly sliced
1/2 pound mushrooms, thinly sliced
1 broccoli head, thinly sliced
1 or 2 potatoes, thinly sliced
olive oil, as needed
salt and pepper, to taste
1. Put all veggies in a large, grill-safe covered dish or pan.
2. Sprinkle with olive oil and seasonings, and let stand in fridge about 2 hours.
3. Put on grill for 4 to 6+ minutes, depending on the amount in your covered dish. Or, place vegetables directly on grill covered with foil.
