1 cup mashed potatoes
1 cup sugar + more
2 cups mixed dried tropical fruit, chopped
1 cup nut meats, chopped
1 tablespoon vanilla
1/2 teaspoon almond extract
1. Grease a cake tin. In a large bowl, gradually mix vegan sugar into potatoes.
2. When mixture begins to thicken, add fruit, nuts, vanilla, and almond extract.
3. Knead in as much additional vegan sugar as mixture will absorb.
4. Pat into prepared cake tin and let stand in a cool place for 24 hours. Then turn out and cut into slices.
