1 small onion diced
2 cloves garlic minced
1 14 1/2 ounce can of tomatoes
1 block tofu extra firm cubed
1 cup medium grain brown rice
1 cup vegetable broth
2 tablespoon olive oil
1 teaspoon each of dried oregano, basil and parsley
salt and pepper to taste
Heat olive oil in large skillet on medium high heat and add onion. Cook until translucent stirring frequently. Add garlic and tofu and saute until tofu is browned on all sides. Add tomatoes, broth, seasonings and rice and bring to a boil. Cover and simmer for about 60 minutes.
I usually serve this meal with a salad and green beans. My kids love it!
