4 ripe tomatoes
1 clove garlic
2 tablespoons olive oil
sea salt and fresh ground black pepper to taste
This recipe comes from Chile. Although the name "Chancho En Piedra" roughly translates to "Pig on a Rock" rest assured the recipe is 100% Vegan. The name originates from "chanchar en piedra" which means to grind in a stone mortar. If you have a stone mortar, you can make this recipe the traditional way.
Blanche and peel tomatoes (optional). Chop tomatoes coarsely and place in bowl, preserving the pulp.
Mince the garlic as finely as possible. Add olive oil, garlic, salt and pepper to the tomatoes. Toss and chill.
The olive oil and salt will draw out the juices from the tomatoes and makes this salad more like a sauce. An alternative method is to add mild yellow peppers, chopped finely. This salad is delicious over rice or on bread.
