2 1/2 very ripe bananas
about 1/2 cup chopped dates
1/2 cup flax seeds
1/2 cup oat bran
1 1/2 cups whole wheat flour
1 cup soy milk (I use unsweetened, but I don't think it really matters)
1 teaspoon baking soda
1/2 tablespoon salt
Preheat oven to 350 degrees. Mash bananas together with flax seed in mixing bowl. Stir in all other ingredients and separate into 6-8 oblong cookies onto nonstick baking sheet. Bake for 35 minutes and allow to cool.
This recipe is very flexible. Just about any dried fruit can be substituted for the dates, but will reduce the sweetness of the finished product (except maybe figs).
Hot cereal to go! Two of these is a great, filling breakfast. Enjoy!
