3/4 cup dry, quick-cooking couscous (plain)
1 mealy apple, such as Macintosh
about 1 cup pure apple cider
6 tablespoons agave nectar or other honey substitute
1 teaspoon vanilla
1/4 cup golden raisins
1/4 cup pecans
Boil the apple cider.
Stir in couscous and vanilla.
Remove from heat, and let sit about 7 minutes or until light and fluffy.
Peel, core, and grate the apple. Stir into the couscous.
Stir in raisins, pecans and agave nectar.
Serve warm.
If you want, add some shredded coconut.
