1 or 2 potato waffles
vegan cheese (grated or thinly sliced)
tomato puree
olive oil
oregano
nutritional yeast (optional)
salt & pepper (optional)
This recipe is 7 minutes for FROZEN waffles. Fresh waffles may cook quicker. Best results are with vegan mozzarella (Redwoods is very good!).
1. Grill the waffle(s) under a high (very hot) grill until they are starting to lightly brown.
2. Remove from grill. Spread a thin layer of tomato puree over each waffle. Top with the vegan cheese. Add a generous sprinkle of the yeast, and a pinch of the salt and pepper.
3. Drizzle with olive oil, top with oregano.
4. Grill for another minute or two until the cheese has melted and/or topping is starting to brown.
