1/2 head cabbage, chopped
1 can Rotel tomatoes (or any diced tomatoes with green chilies)
2 cups cooked rice
1 cup textured soy protein (whatever brand, I use SmartGround)
teaspoon cumin
vegan cheese for topping
Mix the cooked rice with the tomatoes and textured soy protein. Place in the bottom of casserole dish. Top with cabbage and then cheese.
Bake at 400 for 30 minutes or until cabbage is tender and cheese is melted.
