2 cup whole wheat flour
1/4 - 1/2 cup vegan brown sugar or maple syrup
2 small to medium avocados
1/2 cup soy milk
1 tablespoon oil
substitute for 1 large egg
1/2 teaspoon salt
1 teaspoon [aluminum free] baking powder
1/2 teaspoon baking soda
1 small lemon
1 cup alfalfa sprouts (optional)
1/2 to 1 cup chopped almonds, walnuts, or pecans
1/2 cup flaxseed meal (optional)
Preheat oven at 375 Fahrenheit and grease a loaf pan.
Combine flour, sugar, flaxseed meal, baking powder, soda, and salt.
In a separate bowl blend egg sub with avocados until smooth and all mashed up. Stir in soymilk and oil (this is my vegan sub for 1/2 cup buttermilk, maybe you know of something better.)
Mix all ingredients together. Add nuts and alfalfa sprouts. Squeeze a bit of lemon juice into the mixture.
Pour into your greased pan, and bake for 45 - 60 minutes, until a toothpick comes out clean from its center.
