2 cup sesame seeds
1/8 - 1/4 cup peanut or vegetable oil
Using a nice thick pan on med-low heat, lightly toast seeds until fragrant--DO NOT BROWN. Only takes a few minutes, so watch CAREFULLY and shake them around often!
Whip out a food processor or blender and put seeds and oil in and process the mixture until smooth--about five minutes or so. I tend to use the lower amount of oil first, then if the tahini needs to be thinned out, I'll add a tiny bit more. It should be a thick but pourable consistency.
You can store the mix in an airtight container in the fridge for months. SO much cheaper than store bought tahini, and it takes very little time to make!
