1 1/2 cups uncooked oats
1/2 teaspoon baking powder
1/2 large ripe banana (or 1 small)
1 1/4 cups unsweetened soy milk
3 tablespoons natural peanut butter
1/3 cup semi-sweet chocolate chips (optional)
Put the uncooked oats in the blender and blend until an oat flour is formed. Pour flour into a large mixing bowl and add the baking powder, mixing well.
In a separate bowl, mash the ripe banana and add the soy milk. Mix well, then add the peanut butter. Mix very well until the peanut butter has no chunks left.
Add the wet ingredients to the dry ingredients. Mix until just combined, then fold in optional chocolate chips, if you so choose. Let the batter sit for 5 minutes.
While the batter is sitting, ready a skillet on the stove. Spray a skillet with a thin layer of nonstick cooking spray. When the batter is ready, drop by 3 tablespoons onto the skillet, making mini-pancakes (the batter is thick, so it's better to make the mini, although I am sure it would make regular pancakes just fine). Cook for about 2 minutes or so on each side until lightly browned, then put on a plate covered by a towel to keep warm. Repeat until there is no batter left.
This made just enough to feed me and my boyfriend for breakfast this morning!
