1 400g can of red kidney beans, washed and drained
1 400g can of cannelloni beans (or any other kind you prefer), washed and drained
1/2 an onion, chopped fine
3 cloves of garlic, chopped fine
1 fresh habanera chili, deseeded and chopped fine (optional)
2 teaspoon paprika powder
1 teaspoon chili powder
1/2 teaspoon cumin powder
1/2 a 400g can of chopped tomatoes
2 tablespoons tomato paste
1 tablespoon olive oil
Heat the olive oil in a shallow frypan at medium heat. Add onions and cook for 2 minutes.
Add garlic and chili and fry for another 2 minutes.
Add spices and stir vigorously around the pan for 30 seconds. Don't let them burn or stick to the pan.
Add the beans and stir fry for 3 minutes, making sure the spices are coating them nicely.
Add chopped tomatoes, stir for another few minutes.
Add tomato paste and stir through.
When the beans are soft enough, start mashing them either with a potato masher or anything else that does the job. Don't mash them up too much, just a partial mashing will do finely.
Once the mixture is looking thick, rich and red give everything a good stir and turn off the heat.
Now you have a tasty bean mix to add to anything burritos, nachos, tacos or anything you like. I've found that they're really good on pizza.
