2 cups cooked brown rice
1/2 cup quick cooking oats
1 medium onion, chopped
1/4 cup Italian vegan bread crumbs
1/4 cup nondairy milk (I use soy)
1/3 cup okara or egg replacer (http://vegweb.com/index.php?topic=7678.0 [1])
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon red pepper
1/2 cup wheat germ
oil, as needed for frying
1. Mix cooked rice, oats, onion, bread crumbs, milk, egg replacer or okara, and spices.
2. Shape into 1" balls and roll in wheat germ. Heat oil.
3. Once you have rolled all the "meat" balls in the germ, fry them up and eat!
This recipe is delicious for spaghetti, but also would be great as a veggie sub with some marinara sauce. Mmmm. These really are good and simple. They make quite a bit so I froze half for later.
