2 packages seitan (I used Whitewave)
1 red pepper
1 green pepper
1/2 red onion
4 tablespoons fajita seasoning (I used Frontier)
1 package of tortillas
Optional:
1 large tomato
vegan sour cream
This recipe is so filling! Loaded with veggies and tasty, tasty seitan! Of course, you can use more or less vegetables according to your tastes!
Slice seitan into strips and arrange on a baking sheet. Slice vegetables and spread preferred amount on baking sheet with sliced seitan. Set extra veggies aside.
Broil seitan and vegetables until seitan starts to brown.
Transfer broiled seitan and veggies to frying pan adding some olive oil and more veggies if preferred. Sprinkle with fajita seasoning (more or less for taste) and add a small amount of water to help seasoning coat veggies and seitan. Sizzle until all of mixture is coated.
Use leftover fresh veggies and optional tomato to top along with your favorite vegan sour cream.
Wrap in tortillas and enjoy!
This may make more or less than specified, depends on how big you like your fajitas!
