1/2 cup red raspberries
1/2 cup strawberries, hulled and chopped
1/3 cup blackberries
1/4 cup blueberries
1/2 cup soy milk, plain
spoonful of chocolate vegan ice cream
vanilla, to taste
ice cubes, optional
Wash all the berries and chop the strawberries into pieces, about the size of the other berries. Set aside.
Combine soy milk (I used plain, but vanilla would probably work just as well, though it would probably be wise to eliminate the vanilla later) and ice cream in a blender. Blend until fairly smooth, then add the berries, blending until smooth as well.
Add vanilla and ice cubes if desired. This can also be frozen, and I found I enjoyed it more that way.
