1/2 medium cauliflower, chopped
6 medium potatoes, peeled and chopped
1/4 cup nondairy milk (I use soy)
1 clove garlic, crushed
2 tablespoons chopped parsley
2 tablespoons olive oil
salt and pepper, to taste
1. Boil cauliflower and potato together until soft. Mash with nondairy milk (my dad normally uses a stab-mixer to make it really nice and smooth).
2. Add garlic, parsley, olive oil and salt and pepper.
Serve with some veggies. My dad likes to serve it just as it is with some veggie gravy on cold, lazy nights.'
