1/2 cup cooked brown rice
1/2 cup spaghetti sauce
2-3 button mushrooms (chopped)
1/4 cup garbanzo beans/chickpeas
Pour spaghetti sauce in a pan, chop mushrooms and put in pan.
Let simmer for a few minutes before adding the garbanzos.
Pour over cooked rice.
Dig in! :)
This is great because I usually have all these ingredients on hand even if my pantry is getting bare. It is also versatile you could exchange garbanzo beans for pinto or kidney as well as adding more veggies if you please.
