2 cups whole grain bread (the grainier the better!)
1 tablespoon onion powder
scant 1/2 tablespoon red pepper (more or less to taste)
2 tablespoons margarine
1 medium onion (approximately 1/2 cup)
1/2 red bell pepper
1 15 oz. can kidney beans (rinsed and drained)
2 tablespoons dried or fresh parsley
2 tablespoons ketchup
optional - egg replacer (may be needed in dry climates)
In food processor combine first 5 ingredients. Pulse until a coarse breadcrumb is achieved. Spread the oniony breadcrumbs on a baking sheet and toast in the oven (400 F) or broiler. Approximately 10 minutes…just keep checking on it.
Blend red bell pepper in food processor. (You want it to be more pureed/mashed than diced.) Drain off any liquid and place bell pepper puree in a mixing bowl. Add the last ingredients to the mixing bowl. Mash together. (A pastry blender is perfect for this!)
Add toasted breadcrumbs and continue to mash/mix. (At this point it's kind of creepy because the red colors make it look pinkish like raw ground meat. Eck.) Form patties (use pastry blender to form "grill" marks).
Bake on a lightly grease baking sheet at 350 Fahrenheit (180 C) for about 15 minutes, flipping once.
*The egg replacer may or may not be needed. I suggest making the "burgers" and if you can form it into patties that hold together well, then just skip the egg replacer.
