leftover cooked brown rice
1 package seitan strips, rinsed, drained and cut small
fresh pineapple chunks
Asian sauce to taste, e.g. sesame ginger dressing or vegan garlic hoisin
Combine all ingredients and heat through.
In a quest for a quick lunch I threw together these leftovers with great success. Even Hungry Teenager thought it rocked! You could, of course, add some stir-fried veggies if you have leftovers or extra time.
