1 box bran flakes
3 cups sugar
1 quart plain soy milk + 4 tablespoons vinegar
5 teaspoons baking soda
1 cup vegetable oil
egg substitute equaling 4 eggs
5 cups flour
5 teaspoons salt
vegan chocolate chips
cinnamon sugar
Mix the vinegar (lemon juice is also an option) into the soy milk and let stand for 10 minutes. This is a substitute for buttermilk.
Mix cereal, sugar, flour, baking soda, and salt in a very large bowl. Add egg substitute, oil, and soy milk. Then stir in chocolate chips. Fill cupcake holders 3/4 full and sprinkle with cinnamon sugar. Bake at 375 for 15 minutes.
These really helps to get you "regular", and they taste wonderful too!
