4 tablespoons flaxseed meal
3 tablespoons hot water
3 tablespoons plain or vanilla nondairy milk (I use soy)
1 to 3 tablespoons maple syrup, optional
1 to 2 tablespoons non-hydrogenated vegan butter, divided
4 to 8 slices bread, halved diagonally (sprouted grain works well)
1. Mix together the flaxseed meal, water, and milk in a medium-large bowl. Microwave for 30 to 45 seconds, then beat lightly with a fork.
2. Stir in maple syrup. Heat frying pan, and melt about 1/2-1 teaspoon vegan butter. Dip each piece bread in the flaxseed mixture briefly.
3. Fry for about a minute on each side, or until golden brown. Complete remaining bread.
Serve with maple syrup. (And maybe some tofu scramble, for a nice complete breakfast).'
