1 tablespoon olive oil
1/2 small onion, chopped
1 teaspoon cumin
1 teaspoon cayenne pepper
1 green pepper, diced
2 zucchini, 1/2 inch rounds
2 carrots, 1/2 inch rounds
kernels from 2 ears of corn
1 can great northern beans, rinsed
Heat olive oil over medium-high heat. Add onions and spices. Heat until onions are shiny (2 min). Add veggies and sauté (5 min). Add beans and stir until heated.
Great with tortilla chips. I'm sure they would be yummy filling for tacos, enchiladas, etc as well.
