1 cup whole wheat pastry flour
1 cup wheat germ
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1/3 cup coconut milk (reduced-fat works fine)
2/3 cup orange juice
1 Tablespoon apple cider vinegar
1 Tablespoon maple syrup (optional, but good!)
1 ripe peach, chopped into small pieces (peeled, if you prefer)
1 ripe banana, mashed
1/4 cup crushed walnuts (optional)
Preheat oven to 350F.
Combine flour, wheat germ, baking soda, baking powder and walnuts (if using), and set aside.
In a separate bowl, mix coconut milk, orange juice, mashed banana, vinegar, vanilla, maple syrup (if using), until they achieve the consistency of a puree. Gently stir in chopped peach.
Combine dry and moist ingredients, and stir until just mixed.
Turn into lightly greased 9inx9in cake pan.
Bake for ~25 minutes until just starting to brown around the edges.
