1 16oz can white corn, drained
1 16oz can yellow corn, drained
1 16oz can garbanzo beans, drained and rinsed
1 16oz can kidney beans, drained and rinsed
1 16oz can black beans, drained and rinsed
2 cans spicy diced tomatoes
1 small can green chiles
1 large onion, chopped
1 large bell pepper, chopped
2 large fresh tomatoes, chopped
1 8oz bottle Italian dressing
Mix all of the ingredients together and refrigerate. Serve with vegan corn chips.
We usually dice a jalapeno pepper and add it, and substitute one of the cans of tomatoes for 2 cups of Chi Chi’s brand salsa, but it tastes good either way.
