1 or 2 cakes of extra firm tofu
3 tablespoons peanut butter (chunky or smooth)
3 tablespoons tamari or soy sauce
3 cloves garlic chopped or crushed
your favorite BBQ sauce
A friend gave me this recipe.
1. Cut the cakes into 3/4" slices out of the package. Place the slices on top of a doubled up paper towel, folded to the size of the cake. Put a paper towel on the top side. Now put that on top of a clean kitchen towel wrap around and place on cutting board. Place another cutting board on top of package and put something heavy on top. Let sit for at least 30 minutes (you can let it sit as long as you like). This is called "pressing the tofu"
2. Prepare the marinade. Whisk the peanut butter, soy sauce, garlic and pepper to taste with enough hot water to get a thick pour able consistency. It should be the texture of tomato soup.
3. Cut the pressed tofu into finger sized portions. Pour some marinade into glass dish add tofu. Add rest of marinade over the tofu arranging ti so that every piece is submerged. Allow this to marinate several hours or overnight covered in the fridge.
4. Heat oven to 375. Rub cookie sheet with olive oil or use non-stick foil. Gently pull tofu from marinade. With sides NOT touching arrange on pan. Bake for 20 minutes, turn bake for 10 more minutes (or until the edges turn brown). Brush on your favorite BBQ sauce and bake for 10 more minutes.
