Fritters:
1 egg replacer (http://vegweb.com/index.php?topic=7678.0 [1])
1 1/2 cups all purpose flour
2 teaspoons baking powder
hot sauce, to taste (I use Tabasco)
salt and pepper, to taste
1 (14 ounce) can corn, drained
1 medium onion, diced 1/4"
1 celery stalk, diced 1/4"
1/2 green or red bell pepper, diced 1/4"
oil, as needed for frying Dipping Sauce:
1/2 cup vegan mayonnaise
1/4 cup mustard (spicy or regular)
1/4 cup ketchup or tomato paste
1/2 packet sugar substitute
1. Mix the egg replacer, flour, and baking powder and seasonings with sufficient water to form a fairly firm batter.
2. Combine all fritter ingredients, and allow to rest for 15 minutes prior to deep frying. Heat oil.
3. When oil is ready, drop batter in oil by the tablespoon, do not overcrowd pot. Flip the fritters on both sides until golden brown and done in the middle.
4. For sauce, combine all ingredients well (should look something like thousand island dressing in color). Serve fritters hot with dipping sauce.
