2 large yams
2 large sweet potatoes
3/4 cup pure maple syrup
1/2 pecans
1 teaspoon ground ginger
1/4 teaspoon cinnamon
optional 1/4 teaspoon each nutmeg and cardamom
1-2 tablespoon vegan margarine (my favourite: Earth Balance)
optional small minced sweet onions such as vidalia equal to 1/4 cup
Peel potatoes and slice into 1/2 inch "coins" and place into a large bowl.
Run nuts in a food processor until chopped well and add to the bowl.
Add onions if using.
Toss in the seasonings, add the syrup, stir until evenly coated.
Pour into a large casserole and "dot" with pieces of margarine.
Cover and bake at 350 for 30- 45 minutes or until potatoes are soft.
