5 or 6 apples unpeeled
2 Tablespoons vegan butter
1/4 cup brown sugar
1/2 cup yellow raisins
1 teaspoon cinnamon and 1 teaspoon cardamom
1 Tablespoon flour
about 1/3 cup smashed almonds
splash of apple juice
about 6 Tablespoons of jarred caramel sauce, or homemade
8 1/2 in unbaked pie crust, either homemade or bought
Bake your pie crust halfway (mine took 10 minutes, if you use a packaged one, read the directions and cook it half the time). Set aside.
Chop the apples up into little bits. Saute the apples in butter for about 5 minutes. Add the 1/4 cup brown sugar, cinnamon, apple juice, and raisins. Cook for a few more minutes. The mixture should be wet and syrupy.
Slowly add the flour until the syrup is a bit thicker, like honey.
Pour into pie crust.
Top the apples with smashed almonds.
Drizzle with caramel sauce, and more cinnamon if you like.
Bake for about 20 minutes at 350 or until the almonds are toasted on top and your crust is browned.
