2 cups Bisquick Heart Smart or other vegan baking mix
2 cups soy milk
1 1/2 cup sugar
1 large can of cherry pie filling
2 tablespoons vegan butter (I'm an Earth Balance girl myself)
Heat the vegan butter up in the microwave until melted. Pour it into a medium sized baking pan, and make sure you move the pan around so it lightly coats the whole bottom (you may need to use more butter for this depending on pan size). Next, preheat the oven to 350 degrees.
While the oven is preheating, mix the Bisquick, sugar, and soymilk together. The mixture will look really, really runny! Don't be alarmed! If you're afraid it's too thing, though, add a teensy bit more Bisquick....not even 1/4 cup, until it thickens up a bit. Just keep in mind it's going to be runnier than usual.
Once this is mixed, pour it into the pan. You may see the butter float upwards on the edges but that's alright. Pour the cherry pie filling over the batter mixture (if you don't have enough, don't worry....just pour the liquid cherry part over the part's that don't have any cherries).
Put in the oven and bake for about 40 minutes (mine took a little bit longer). The top should be a light golden color, and it will feel soft like it's going to give way when you touch it. This can be eaten right out of the oven. I'm sure you'll love this - my grandma makes this version every year for my family on thanksgiving and they chow down on it. My boyfriend also ate about 1/2 of this the night I made it!
