2 slices of bread
1/2 avocado
1 slice of vegan Swiss soy cheese (see http://www.veganchef.com/ndswiss.htm [1] for recipe)
1/4 cup sauerkraut
3 Tablespoons Vegenaise
1 Tablespoon mustard
Mix mustard and Vegenaise in a bowl together. Spread bread with a thin layer of the mixed dressing on both sides of bread. Top one side with sauerkraut. Then place sliced Avocado on top of sauerkraut. Add soy cheese on other slice of bread. Close sandwich. Grill like a grilled cheese sandwich.
