1/2 cup applesauce
1 NRG egg replacer, prepared as directed
1 3/4 cup sugar (I start out using a bit less, and add more if needed)
1 cup vegan margarine
3/4 cup soymilk soured w/ 1 Tablespoon apple cider vinegar
2 1/2 cup flour
2 Tablespoons cocoa
1 Tablespoon baking soda
1 teaspoon cinnamon
1/2 teaspoon allspice (optional, adds a strong spice)
1/2 teaspoon salt
1 1/2 teaspoon vanilla extract
1/2 cup chocolate bits
2 cups peeled, cored, chopped apples
Preheat oven to 325 degrees F.
Prepare the NRG egg replacer, as directed and whisk well. Set aside. Sour the milk, by adding the vinegar and set aside.
Grease and flour a bundt pan or tube pan.
Sift together dry ingredients (flour, cocoa, soda, spices)
Whip well, until fluffy, vegan margarine and sugar. Add the applesauce, vanilla, NRG and soymilk.
Add dry ingredients to wet. Batter should be light and fluffy. Fold in chopped apples, chocolate bits, nuts (if desired).
Spoon evenly into pan. Bake for about 70 mins.
When cooled, add a topping, if desired. Melted chocolate drizzled over top. or Apple cider glaze...confectioner's sugar thinned out w/ apple cider and drizzled over top. - OR -plain ole powdered sugar dusted over top.
