2 tablespoons olive oil, divided
2 slices bread, lightly toasted, finely chopped
3 cloves garlic, minced, divided
1 large zucchini, quartered then cut into 1/2" slices
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1. Heat 1 tablespoon of the olive oil in a large skillet over medium-high heat. Add bread crumbs and 1 1/2 cloves garlic.
2. Cook 2-3 minutes or until crumbs become golden brown and crunchy. Transfer to a plate.
3. Heat 1 tablespoon olive oil in the same skillet over medium-high heat. Add zucchini and cook 2-3 minutes, stirring occasionally, until it begins to brown.
4. Add remaining 1 1/2 cloves garlic and cook for 1 minute. Add bread crumbs, salt, and pepper. Toss and serve immediately.
