3 cups sifted all-purpose flour
1/2 t salt
1/4 t nutmeg
1/2 t cinnamon
1 tablespoon baking powder
1 cup sugar
1/4 cup applesauce
1/4 cup soymilk
1/2 cup vegan sour cream
1 t lemon juice
2 tablespoon melted shortening
canola oil for frying
vanilla glaze--below
Sift together all dry ingredients, including sugar.
Mix together all wet ingredients.
Heat 3" of oil in large saute pan to 375 degrees.
Mix wet ingredients into dry.
Form soft dough--dust surface and roll into 3/4" flat round--handling dough as little as possible.
Use donut cutter or knife to cut into 2"x1" strips.
Drop strips/donuts into hot oil and fry golden brown--flipping once.
Make certain oil remains @ 375 degrees or donuts will get too greasy. Drain hot donuts on cooling rack.
When donuts are cool, dunk in vanilla glaze, covering each completely. Store in air tight container in refrigerator.
