1 cup creamy peanut butter
1 cup firmly packed brown sugar
1 egg replacer (I use 1 1/2 teaspoons Ener-G Egg + 2 tablespoons water)
3/4 teaspoon baking soda
1/2 cup vegan chocolate chips
1. Preheat oven to 350 degrees F. Grease a cookie sheet, or line with parchment paper.
2. With a spoon, mix together first 4 ingredients. Stir in the chocolate chips.
3. Drop by rounded teaspoonfuls about 2" apart. Bake for 9 minutes. Let them cool on the sheets for about 5 minutes before you try to take them off, so they don't fall apart.'
