3/4 cup chana flour
2 teaspoons turmeric
3 cardamom pods
1 tablespoon grated ginger, or pressed in a garlic press
pinch of salt
dash of vanilla extract
stevia or sugar or other sweetener to taste (I used 3 dropper fulls of 'now' brand glycerin stevia which is probably = 3 tablespoons of sugar)
2 cups water
In a medium saucepan heat i cup water and add ginger.
Open the cardamom pods and add in just the seeds.
Add the salt.
Boil for 3 minutes on high, then turn down to low. Add 1 cup cold water and sprinkle the flour in slowly, a little at a time, whisking with a wire whisk as you go. Keep whisking until it gets to a pudding consistency. Wisk fast because this stuff gets lumpy!
Add turmeric, sweetener, and vanilla. Make sure its sweet enough or it will taste very "beany".
Variations: add cinnamon, carob, coconut, coconut milk, raisins, toasted nuts, shredded carrot, Mmmmm the possibilities are endless
Chana flour is made from a bean called chana dahl. It is very high in protein and low in starch - a great food for diabetics and those wanting to watch their weight. It can be hard on people that have problems digesting beans though, so take it easy, pudding head! (I think the turmeric helps this, but you can leave it out if you don't have it.)
