2 cup flour
1 teaspoon baking soda
1 teaspoon sea salt
1/3 cup dutch-processed cocoa powder
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla
1/2 cup soy yogurt
1 cup vegan margarine (Earth Balance)
1 1/2 cup vegan white chocolate chips
1/2 cup sun dried cherries (unsulfured kind)
When my friend wanted cookies, i had to improvise with what i had around the house and this is what i came up with -the cherries are a nice change from raisins and the white chocolate goes very nicely with them.
Preheat oven to 375 F. Combine flour, baking soda, salt and cocoa powder. in a separate bowl beat margarine, both sugars and vanilla. Beat in yogurt. gradually beat in the flour mixture until well combined. Fold in the white chips and dried cherries.
Drop by spoonfuls onto greased cookie sheets and bake for 8-10 minutes.
