3/4 cup short grain brown rice (or what your rice cooker determines as "one cup")
1 cup cooked drained or canned chickpeas
1 teaspoon fresh thyme
1 teaspoon grated lemon zest
1 1/4 cup water or stock
black pepper
olive oil
scallions, parsley, capers, cherry tomatoes, ect for garnish (optional)
1 handful coarsely chopped kale
Locate rice cooker (preferred) or the pot you make rice in :). Toss in rice, chickpeas and kale, thyme, lemon zest and a crack of pepper.
Steam until the water is absorbed and your rice is done (depending on the grain and color of your rice, this will vary).
If you want, dress it up with some fresh squeezed lemon juice, salt, fresh parsley, capers and bits of grape tomatoes! or just toss in some yummy olive oil and eat as is :)
