1 cup brown rice flour
1 teaspoon baking powder
1 cup rice milk or soymilk
1 cup sultanas
1/2 cup shredded dried coconut
1/2 cup brown suga and extra for sprinkling
1/2 cup chopped almonds
1 red or green apple
Pre-heat oven to 350 degrees Fahrenheit.
Sift flour with baking powder into a bowl.Add sultanas, coconut, sugar & nuts. Stir. Add rice milk or soymilk.Mix well. Spread into a 6 x 10 inch cake pan lined with baking paper (don't worry if your pan is slightly smaller or bigger).Arrange the apple in thin slices over the surface.Mix together 1 tablespoon of sugar plus the 1/4 teaspoon cinnamon and sprinkle over.Bake for 30-35 minutes or until cooked- a skewer poked in the centre will come out clean. Let cool before cutting.
Note: The slice will be a bit pale when cooked because of the brown rice flour. However you can also make this using wholemeal wheat or spelt flour but it won't be gluten-free.
Source of recipe: inspired by traditional versions of apple/sultana slice (not from a paricular book).
