2 cups pre-cooked cannellini beans
2 cups fresh or frozen Italian green beans
1 onion, chopped
2 cloves garlic, chopped
1 medium potato, baked or microwaved, peeled and diced
3 tablespoons olive oil
pinch cumin
salt and pepper
Brown onion and garlic in oil. Add beans, potato, and seasonings, lower heat and simmer until tender. Serve with crusty wholegrain bread for a one-dish meal.
