vegetable oil
1 (12-ounce) package vegan "meat" crumbles (something that looks like ground beef)
1 teaspoon vegan taco seasoning
sauerkraut
mashed potatoes
raw onions, finely diced (optional)
french-fried onions
applesauce (optional)
I didn't put amounts because you just need to eyeball it.
1. Preheat oven to 400 degrees F. Grease 8" x 8" casserole dish.
2. In saucepan, heat vegetable oil. Add crumbles and taco season. Cook until heated through.
3. Cover bottom of casserole dish with the tofu crumbles. Add layers in the following order: a thin layer with sauerkraut, just so it covers the tofu; mashed potatoes; raw onion. Sprinkle french-fried onions over the top.
4. Bake for 10 to 20 minutes, or until heated through. Serve with applesauce.
This is really easy and it tastes good - it has a nice sweet/sour/spicy thing going for it.
