1 cup vegan butter
1 cup firmly packed brown sugar
1/2 cup sugar
3 to 4 tablespoons soymilk
1 teaspoon vanilla
1 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
cinnamon (to taste)
3 cups instant oatmeal
1 cup vegan chocolate chips
1) Preheat oven to 300 degrees Fahrenheit.
2) Beat sugars and vegan butter until creamy. Add soymilk and vanilla and mix well.
3) Combine flour, salt, baking soda, and cinnamon in separate bowl and mix well. Add to wet ingredients and mix well. Add oatmeal and chocolate chips and mix well.
4) Scoop dough by the tablespoon full onto ungreased baking sheet and bake for 12 minutes. Check for doneness. If needed, bake for two more minutes until done.
