2 cups whole wheat pastry flour
1 teaspoon baking powder
1 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon alls pice
1 1/2 cups sugar
3/4 cup vegetable oil
1 "egg" substitute
2 teaspoon vanilla or coconut extract
1 1/2 cups lentil puree
1 cup rolled oats
1 cup raisins or dried cranberries
1 cup dried shredded coconut
2/3 cup lentils
Preheat the Oven to 375 degrees Fahrenheit.
In separate bowls;
-Combine the Flour, Baking Powder, Saltand Spices.
-Mix the Sugar, Oil, "Egg",Extract andPuree together until thoroughly blended.
Add the Wet mixture to the dry, and stiruntil dough sticks together.Mix in the oats, coconut and fruit.
Bake for 10-15 minutes. I like to rotatemy cookies after 5 minutes.
---The Lentil Puree---
Take the 2/3 cup of rinsed lentils and2 cups of water, bring to a boil and letsimmer for 40 min. Puree in foodprocessor or blender if it has thecapability. I suggest doing this beforeyou begin baking as to minimize bakingtime.
