1 1/2 cups water
1 scallion, chopped
2-3 oz baked tofu, cubed
1/4 teaspoon fresh ginger root, minced
1/4 teaspoon fresh garlic, minced
1 1/2 tablespoons of white or yellow miso paste
1 lemon wedge
Heat water as for tea. Put allingredients except lemon into a bowl andstir until miso paste is dissolved. Squeeze lemon into soup and eat.
I use Wildwood Organics baked tofu, butyou can certainly bake your own...butwho wants to when sick? Also, if Idon't have fresh garlic or ginger, Iused powdered. Just a sprinkle of each.
