4 red potatoes, rinsed and cubed (I leave the skins on) 5 to 6 button mushrooms, sliced 2 cloves garlic, minced 1 jalapeno pepper, diced Other chopped veggies, optional Salt and pepper Pinch cumin seeds Shredded vegan pepper jack cheese, optional 1 small tomato, diced Oil for frying
1) Heat oil in non-stick frying pan and add potatoes. Cook on medium high heat, stirring occasionally until half way done, about 15 to 20 minutes. Add mushrooms, salt, pepper, and garlic. Continue cooking for 5 minutes, then add jalapeno pepper and cumin. Continue cooking until potatoes are tender. Add optional cheese and heat until melted thoroughly.
