1 jicama, shredded or julienned
1 avocado, cut into thick slices
1 mango, diced
2 tomatillos, diced
1-1/2 red onion shallots, chopped into half-circles
cilantro leaves, roughly chopped (optional)
1 lime, zested and juiced
1. To prepare the jicama, you must peel it's tough skin. This is often easier when it is cut in half. Then shred the jicama on a cheese grater or julienne it- whichever you prefer- and place in to your salad bowl.
2. Add avocado, mango, tomatillos, and shallots. Then add cilantro leaves, if you choose to.
3. Take the lime, and zest it over your salad using a citrus zester or the fine side of a cheese grater. Zesting involves grating the skin of the fruit, and using just a little bit will add tons of flavor to your food. After zesting the lime, squeeze the juice over the salad bowl. Toss the salad and let chill for a few minutes so that the flavors can blend. Serve and enjoy!
