1 (16 ounce) bunch asparagus, tough ends snapped off
1 (8 ounce) container whole white mushrooms, sliced in 1/2
1/2 red onion, cut in thick slices
cooking spray, as needed
fresh ground pepper, to taste
creole seasoning, to taste
1-2 cloves garlic, minced, optional
1. Preheat oven to 400 degrees Fahrenheit. Put the asparagus, mushrooms, and onion into a large enough baking tin and drench them with cooking spray.
2. Add pepper, creole seasoning, and minced garlic. Spray the veggies again with cooking spray and shake the pan around to coat the veggies.
3. Pop in the oven for about 10 minutes. Make sure not to overcook the asparagus, you want it to still be a little crispy.
This is a lower fat alternative to roasting veggies in oil and tastes just as good!
